We called this a Viking Saison because we imagined what a modern, hip Viking would call this beer; however, this ale is brewed in the ancient Norwegian Farmhouse tradition. We barrel-fermented this ale in Halter Ranch Winery white wine barrels with ingredients a Viking would have used: wheat, oats, and barley as well as a heaping dose of local sage honey. But the lynchpin of this beer was the Norwegian Kveik yeast, harvested in Stranda, Norway. We did an entirely uncontrolled fermentation in our warehouse to allow this yeast to fully express itself. This is a small-batch brew, so quantities are limited.
Tasting Notes: rich, smooth mouthfeel; dry, mead-like body, champagne-like carbonation; flavors of honey, spice, grain, and stonefruit.
